Entertaining this weekend? Why not try this easy to make and delicious salad. It’s sure to impress! As well as being delicious, this salad has been created by Nutritionist Fleur Borrelli so it’s super healthy as well. Double win!

Blueberry salad with jalapeno dressing

This is a great lunch time salad for one or two people depending on how hungry you are! It is unusual in that one of the main ingredients is blueberries. Blueberries are rich in compounds called anthocyanins that can protect against a myriad of diseases.

Ingredients:

  • 500g of cooked prawns
  • 2 cups of blueberries
  • 2 cups of rocket leaves
  • ¼ cup of fresh chopped mint
  • ¼ cup of coriander
  • 1 avocado diced

Dressing:

  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil
  • 1 orange zest grated and juiced
  • 1 tablespoon white wine vinegar
  • Some dried red chilli flakes
  • ¼ diced jalapeno
  • Sea salt to taste

Instructions:

  • In a large bowl assemble all the main ingredients.
  • In a small bowl add the dressing ingredients and pour over salad.
